INTERNATIONALLY acclaimed restaurateur Shaun Corrigan has been appointed as the new General Manager to South Wales based Crown Hotels and Restaurants.
Shaun, an award winning Sommelier, takes over from current General Manager David Hennigan who, after three years in the role, is emigrating with his wife to her native New Zealand.
Crown Hotels and Restaurants currently have two establishments in South Wales. One is the Michelin star Crown at Whitebrook, near Monmouth and the other the three AA rosette Crown at Celtic Manor Resort.
Shaun comes to the Crown Group from the Grand Hotel, St Helier Jersey where he was Restaurants Manager. Shaun, originally from Hampshire, was previously restaurant manager at The Cliff Restaurant Singapore and among other previous positions he was restaurant director at The Grand Lisboa Hotel, Macau, China; restaurant manager at L’Ortolan Restaurant, Reading, restaurant director at La Gousse D’Ail Restaurant, Oxford, Head Sommelier at the Vineyard, Stockcross, Berkshire and wine manager at Burj Al Arab Hotel, Dubai.
Shaun said: “It’s extremely exciting to be joining The Crown Group at this time. Although there is no doubt David will be a tremendously hard act to follow I am relishing the opportunity to be able to put the world wide restaurateur experience to best use in assisting the businesses to continue to move ahead, building on the solid foundations David has put in place during the past three years.”
David Hennigan, who joined The Crown at Whitebrook as General Manager in December 2007, oversaw the opening of The Crown at Celtic Manor and the resort’s fine dining restaurant’s attainment of the prestigious three AA rosettes.
David, named UK Restaurant Manager of the year 2010, has been front of house as The Crown at Whitebrook and Celtic Manor secured a raft of prestigious accolades for food, wine and accommodation.
David said: “I have enjoyed my time at Crown Restaurants immensely. There have been so many highlights over the past three years indeed the entire time has been a career highlight to date.
“Working with and alongside the Board opening the Crown at Celtic Manor and winning the UK Restaurant Manager of the Year, and helping Whitebrook collect so many awards has meant the entire time has been fantastic.”
Commenting on his replacement David said: “Shaun’s ability to communicate with both the front of house teams and the kitchen is a major plus. He shares The Crown’s ethos of service excellence. He is incredibly well versed in wine and has an understanding of the kitchen and what makes chefs tick, so altogether a good all rounder.”
